Tomato Sauce (Molho de tomate)

Ingredients

2 kg ripe tomatoes (Debora or Roma type), halved and seeded
6 tbsp olive oil
1 small onion, chopped
2 garlic cloves, crushed
1 pinch cumin
Salt to taste
Fresh basil to taste

Where to find ingredients

Fresh produce can be found in local markets or grocery stores. For the tomatoes, choose firm, ripe varieties. Canned whole peeled tomatoes can be used as a substitute if fresh ones are out of season.

Preparation method

  1. Place the tomatoes in a pot and cook over medium heat until they become soft.
  2. Pass the cooked tomatoes through a food mill or a fine-mesh sieve to remove the skins and obtain a smooth puree.
  3. In a separate pot, heat the olive oil.
  4. Sauté the chopped onion and crushed garlic until lightly golden.
  5. Add the processed tomato puree and the pinch of cumin to the pot.
  6. Simmer over low heat for 15 minutes.
  7. Season with salt to taste.
  8. Finish the recipe by adding fresh basil just before serving.

Observations

A sauce made from scratch always brings a superior flavor compared to store-bought versions. This recipe focuses on simplicity and the freshness of the ingredients, resulting in a versatile base for your daily cooking.
