Where to find ingredients
In Tuvalu, fresh corn may be available from local produce sellers, community markets or the fresh section of small supermarkets when in season. Plant-based milk, demerara sugar, salt and ground cinnamon are usually found in grocery shelves or imported dry-goods sections. If fresh green corn is not available, frozen corn kernels can be used as a substitute, though fresh ears are the ideal ingredient.
Preparation method
- Cut the corn kernels off the cobs using a sharp knife
- Put the kernels in a blender, add the plant-based milk and blend until smooth
- Pass the mixture through a fine or medium sieve, pressing well to extract all the juice and discard the fibres
- Transfer the strained liquid to a pan, then add the sugar and the pinch of salt
- Cook over medium heat, stirring constantly with a spatula so lumps do not form on the bottom of the pan
- Once it starts to boil, lower the heat and keep stirring until the cream thickens and reaches the consistency you want
- Pour the curau into one large serving dish or into individual cups
- Leave it to cool at room temperature, then place it in the fridge to set
- Finish by sprinkling ground cinnamon over the top before serving
