Brazilian Candy Apples (Maçã do Amor)

12 small to medium apples
1 kg granulated sugar
500 ml water
1 tablespoon white vinegar
Red food coloring (powder or liquid)

Where to find ingredients
You can find apples, sugar, and vinegar at any standard supermarket or grocery store. Red food coloring is typically available in the baking aisle or at specialty party supply stores.
Preparation
- Wash and dry the apples thoroughly
- Insert 1 or 2 wooden skewers into the top of each apple to provide stability during the dipping process
- Lightly grease aluminum baking trays or pans with a very small amount of vegetable oil
- Combine the sugar, water, vinegar, and red food coloring in a pot
- Do not use a spoon to stir the mixture at any point as this may cause the sugar to crystallize
- Gently swirl the pot if you need to incorporate the ingredients
- Use high heat until the mixture begins to boil
- Reduce the heat to medium once boiling and maintain for approximately 25 minutes
- Test the syrup by dipping the tip of a skewer into the liquid and dropping a small amount onto a greased tray
- Wait a few seconds for it to cool then press it with your finger
- If the sugar droplet is solid and makes a hard tapping sound against the tray, the syrup is ready
- Turn off the heat immediately
- Dip each apple into the syrup to coat evenly
- Place the coated apples onto the greased tray to set
Notes
Work as quickly as possible once the syrup reaches the right consistency, as it will naturally begin to harden as it cools.
