Ingredients
1 medium onion, finely chopped
1/2 cup vegetable oil
1 kg ground beef (or a beef and pork mince mix)
2 beef bouillon cubes
1 cup water
6 tbsp cornflour
1 cup mashed potato
Fresh parsley, chopped to taste
4 tbsp creamy soft cheese (requeijão)
1/2 cup vegetable oil
1 kg ground beef (or a beef and pork mince mix)
2 beef bouillon cubes
1 cup water
6 tbsp cornflour
1 cup mashed potato
Fresh parsley, chopped to taste
4 tbsp creamy soft cheese (requeijão)
Where to find ingredients
Onions, vegetable oil, beef mince, potatoes, and cornflour are available in the produce and baking aisles of any local supermarket. Beef bouillon cubes can be found in the pantry or stock aisle. For the fresh parsley, check the herb section in the produce department. The authentic creamy soft cheese, known as 'requeijão', can often be found in the specialty dairy or international section of larger supermarkets, or at dedicated Brazilian/Latin American grocery stores; if unavailable, a high-quality cream cheese or a mix of crème fraîche and a little salt can serve as a substitute.
Preparation method
- Heat the vegetable oil in a large saucepan over medium heat
- Add the chopped onion and sauté until it becomes translucent and lightly golden
- Add the minced meat to the pan and cook, breaking it up with a spoon, until browned and no longer pink
- Dissolve the beef stock cubes into the meat mixture and stir well
- In a separate bowl, dissolve the cornflour in cold water until smooth
- Pour the cornflour mixture into the pan with the meat, stirring constantly until the sauce thickens slightly
- Fold in the mashed potato and chopped parsley, mixing everything until the consistency is uniform
- Transfer the meat mixture to a baking dish, spreading it out evenly
- Top the meatloaf surface with the cream cheese, spreading it into a smooth layer
- Place in a preheated oven at 180°C for about 15 to 20 minutes, or until the cream cheese has melted and turned lightly golden
- Remove from the oven and serve the meatloaf warm
