Where to find ingredients
Look for the beef ribs and mandioca at the meat counter and in the root vegetables section of your local supermarket or market. If mandioca is unavailable, cassava is the closest substitute.
Preparation method
- In a large pot, heat the oil over medium-high heat
- Add the rib pieces and fry until browned on all sides
- Drizzle with the lemon juice and add the boiling water
- Cook the ribs over low heat, with the pot partially covered, stirring occasionally, until the meat is tender. If needed, add more boiling water to keep it moist and prevent it from drying out
- Add the mandioca pieces to the pot
- Stir regularly and keep cooking until the mandioca is very tender, beginning to break apart slightly and helping to thicken the broth
- Season with the crushed malagueta pepper and adjust the salt to taste
- Add the onion slices over the meat and mandioca
- Cover the pot and cook for a few more minutes, just until the onions soften without losing their shape
- Transfer the ribs and mandioca to a serving dish, top with the onion slices, and serve immediately
- It goes well with white rice
