Ingredients
12 ears of corn with husks, fresh and clean
2 teaspoons salt
3 tablespoons grated Minas-style cheese or parmesan
1/2 teaspoon sugar
1 cup whole milk
1 tablespoon margarine or butter
2 teaspoons salt
3 tablespoons grated Minas-style cheese or parmesan
1/2 teaspoon sugar
1 cup whole milk
1 tablespoon margarine or butter
Where to find ingredients
Look for fresh corn with husks at the produce market, and pick up cheese, milk, butter or margarine, salt, and sugar at the dairy and pantry sections. If you cannot find Minas cheese, parmesan is the closest substitute.
Preparation method
- Carefully remove the husks from the corn ears, keeping some whole for assembly
- Cut the kernels off the cobs with a sharp knife
- Place the kernels in a blender and blend until you get a well-ground mixture
- Add the milk to the corn cream and process again until smooth
- Pass the mixture through a coarse sieve to remove fibres and get a smooth cream
- Transfer the sieved cream to a bowl and mix in the salt, sugar and grated cheese
- Wash the reserved husks under running water
- Shape the husks into small pouches, forming individual portions
- Fill each pouch with the corn cream, seal the ends well and tie with kitchen string
- Place the pamonhas to cook in a pot of boiling water
- Cook for about 10 minutes until set
- Remove the pamonhas from the water, drain and serve hot or at room temperature
