Where to find ingredients
You can find fresh herbs, onions, and pantry staples like rice, olive oil, and bay leaves at any local market or general grocery store.
Preparation method
- Peel and chop the onion into small pieces
- Wash the parsley, dry it well, and chop it coarsely
- Put a little more than 2 cups of water in a kettle and heat over low heat to boil
- Heat a medium saucepan over low heat
- Add the olive oil and the chopped onion
- Season with a pinch of salt and sauté for approximately 2 minutes until the onion is soft
- Place the bay leaf and the rice in the pan
- Stir continuously for 1 minute to ensure the grains are coated by the olive oil
- This process helps to keep the rice fluffy after cooking
- Measure exactly 2 cups of boiling water and add to the rice
- Season with the remaining salt and mix well
- Increase the heat to medium
- Avoid stirring from this moment on
- When the water reaches the level of the grains, reduce the heat and cover the pan partially
- Cook until all the water is absorbed
- Check if the bottom of the pan is dry using a fork to push the grains aside
- Turn off the heat
- Keep the pan covered for 5 minutes to finish cooking in the steam
- Use a fork to fluff the grains, incorporate the chopped parsley, and mix gently
- Serve immediately
