Feijão fradinho vinaigrette: quick and refreshing recipe (Vinagrete de feijão fradinho)

Ingredients

1 cup of feijão-fradinho
4 cups of water for cooking
1 medium red onion
1/2 yellow bell pepper
2 medium tomatoes
1/4 cup of extra virgin olive oil
2 tablespoons of white wine vinegar
Juice of 1 lime
1/4 cup of fresh cilantro leaves
Salt to taste
Freshly ground black pepper to taste

Where to find ingredients

Ingredients can be found at local supermarkets or fresh produce markets in To-TO, especially in vegetable and spice sections.

Preparation method

  1. Place the feijão-fradinho in a pressure cooker.
  2. Add 4 cups of water.
  3. Close the lid and bring to high pressure over high heat.
  4. Once the cooker starts to hiss, reduce the heat.
  5. Cook for 10 minutes.
  6. Dice the red onion into small cubes.
  7. Remove seeds from the yellow bell pepper and dice.
  8. Cut the tomatoes in half, discard seeds, and dice.
  9. Wash and finely chop the cilantro leaves.
  10. In a large bowl, combine the diced onion, pepper, and tomato.
  11. Turn off the heat after cooking and let the pressure release naturally before opening.
  12. Drain the cooked feijão fradinho in a colander.
  13. Rinse the beans under cold water to halt cooking and drain well.
  14. Add the cooked feijão fradinho to the bowl with the chopped vegetables.
  15. Season with olive oil, white wine vinegar, lime juice, salt, and black pepper.
  16. Gently mix all ingredients.
  17. Serve immediately, garnished with fresh cilantro leaves.
