Preparation method
- Dice the onion into very small cubes
- Heat the water until it reaches a boil
- Heat a medium saucepan over low heat
- Add the olive oil and onion
- Add a pinch of salt
- Sauté the onion for 2 minutes until softened
- Incorporate the bay leaf into the mixture
- Add the rice and stir for 1 minute so the grains are coated in the olive oil
- Pour the boiling water over the rice
- Season with the remaining salt and mix gently
- Increase the heat to medium
- Do not stir the rice from this point on
- Wait until the water level reaches the surface of the grains
- Lower the heat and cover the pan partially
- Cook until all the water has been absorbed
- Test the doneness by inserting a fork and pushing the grains aside at the bottom of the pan
- Keep on the heat for a few more moments if there is still moisture
- Turn off the heat and keep the pan covered for 5 minutes so the steam finishes the cooking
- Fluff the grains gently with a fork before serving
