Where to find ingredients
Rice: Long-grain white rice is easily found in any local grocery store or supermarket in Tonga. Olive oil: Widely available in the cooking oil aisle of most supermarkets. Onion and fresh Tahitian lime: Best purchased at local markets ('maketi') or fresh produce sections; Tahitian limes (often just called limes) are standard for this recipe, providing the best aromatic zest. Salt and bay leaves: Found in the spice aisle of any local food store.
Preparation method
- Finely dice the onion into small pieces
- Bring the water to a boil in a kettle
- Place a medium saucepan over low heat
- Add the olive oil and the diced onion to the pan
- Sprinkle in a pinch of salt
- Sauté for about 2 minutes until the onion is soft and translucent
- Toss in the bay leaf and the rice
- Stir for about 1 minute to ensure the grains are well coated in oil; this is the secret to a fluffy, non-sticky result
- Measure 2 cups of the boiling water and carefully pour it over the rice
- Add the remaining salt and give it a quick stir
- Increase the heat to medium
- Avoid stirring from this point on
- Wait for the water to evaporate until it reaches the level of the rice grains
- Lower the heat and cover the pan partially with the lid
- Cook until all the water is fully absorbed
- Check the bottom of the pan with a fork to ensure there is no water left
- Turn off the heat
- Sprinkle the fresh lime zest over the rice
- Cover the pan tightly with the lid
- Let the rice steam for 5 minutes
- Use a fork to fluff the grains and gently incorporate the zest
- Transfer to a serving bowl and serve while piping hot
