1 tin condensed milk
Pulp of 2 medium passionfruits (for decorating)
1/2 cup water

Where to find ingredients
In Tonga, look for condensed milk, tinned cream and sugar in supermarkets or general stores, and passionfruit at produce markets when in season. Concentrated passionfruit juice may be in the juice or baking section; if unavailable, use a clearly labelled passionfruit concentrate as a substitute while keeping fresh passionfruit pulp for the topping.
Preparation method
- In a blender, add the condensed milk, cream and concentrated passionfruit juice
- Blend until the mixture is smooth and creamy
- Transfer the mixture to a nice serving dish or to individual small cups
- Refrigerate for at least 2 hours, or until well set
- If you want to speed it up, you can place it in the freezer for about 30-40 minutes
- While the mousse chills, prepare the syrup: in a saucepan, mix the sugar and water
- Place over medium heat and cook until the sugar dissolves and forms a thread-stage syrup
- Add the passionfruit pulp to the syrup, stirring gently
- Cook for another 1 or 2 minutes, just to warm through and bring the flavours together
- Remove from the heat
- Once the mousse is firm, pour the passionfruit syrup over the top before serving
