Creamy Papaya Sorvete with Cashews

Ingredients

100g sugar
2 tablespoons roasted cashew nuts, roughly chopped
2 medium-sized papayas, ripe
250ml fresh heavy whipping cream

Where to find ingredients

In Tonga, you can find fresh, ripe papayas in local markets (maketi) or fresh produce sections of major grocery stores. Look for heavy whipping cream in the chilled dairy aisle—if it is not clearly marked, check for 'thickened cream' or 'heavy cream' intended for baking. Cashew nuts are widely available in the snack or baking aisles of local supermarkets. If fresh papayas are exceptionally soft, handle them gently to ensure you get clean cubes for the mix.

Preparation method

  1. Slice the papayas in half and scoop out all the seeds
  2. Scoop out the pulp of one papaya and blitz it in a processor until you have a smooth purée
  3. Dice the pulp of the second papaya into small, bite-sized pieces and set them aside
  4. In a mixing bowl, whip the heavy cream with the sugar until you reach firm peaks
  5. Gently fold the papaya purée into the whipped cream, being careful to keep the mixture light and airy
  6. Add the diced papaya pieces and fold them in gently so they stay evenly distributed
  7. Pour the mixture into a container or an ice cube tray and pop it into the freezer for at least 4 hours to firm up
  8. To serve, quickly run the base of the container under warm water to help it release
  9. Slice the sorvete into cubes, serve in bowls, and scatter the chopped cashews over the top
  10. If you fancy, squeeze a little lime juice over the top for a bright, citrusy finish

Observations

This papaya sorvete is a tropical delight that pairs the natural sweetness of ripe papaya with a smooth, refreshing texture. It is a simple, no-fuss dessert that brings a taste of Brazilian sunshine to your table. The blend of silky papaya purée, rich cream, and crunchy cashews makes for a lovely, light treat that’s perfect for casual entertaining or a quick afternoon pick-me-up.
