Ingredients
1 sachet of unflavoured gelatine powder
6 tablespoons cold water
1 can sweetened condensed milk
1 can whole milk (use the empty condensed milk can as your measure)
2 pots plain yoghurt
6 medium red guavas
1/2 cup sugar
1 1/2 cups water (for the coulis)
1/2 cup water (optional, for adjusting the coulis)
6 tablespoons cold water
1 can sweetened condensed milk
1 can whole milk (use the empty condensed milk can as your measure)
2 pots plain yoghurt
6 medium red guavas
1/2 cup sugar
1 1/2 cups water (for the coulis)
1/2 cup water (optional, for adjusting the coulis)
Where to find ingredients
Condensed milk and plain yoghurt are staples in any local supermarket. For red guavas (the essential ingredient for the authentic flavour), check the fruit and vegetable section of Asian or Pacific island grocery stores, or search in the produce aisles of larger supermarkets that stock exotic fruits. Unflavoured gelatine is readily available in the baking aisle. If fresh red guavas are unavailable, look for high-quality frozen guava pulp in the freezer section of specialty stores, though fresh fruit is always preferred for the best flavour.
Preparation method
- Bloom the unflavoured gelatine in the cold water
- Dissolve the bloomed gelatine completely using a bain-marie
- In a blender, combine the condensed milk, whole milk, plain yoghurt, and the dissolved gelatine
- Pour the mixture into a ring mould lightly dampened with water
- Chill in the fridge for about 4 hours or until the flan is properly set
- While the flan sets, prepare the coulis by peeling and chopping the guavas into chunks
- Combine the guava chunks, sugar, and 1 1/2 cups of water in a saucepan
- Simmer over low heat for 20 minutes until the guavas are soft and beginning to break down
- Remove from the heat and blitz the mixture in a blender until smooth
- Return the purée to the pan and cook over low heat for another 15 minutes, stirring occasionally, until it thickens
- If the sauce becomes too thick while cooking, stir in the remaining 1/2 cup of water to reach your desired consistency
- Let the guava coulis cool down completely before serving it drizzled over the flan
Observations
This yoghurt flan with guava coulis is a traditional Brazilian dessert known for its light texture and refreshing flavour, making it a perfect end to your meal. The contrast between the smooth, delicate flan and the intense, tangy fruit sauce is sure to be a crowd-pleaser.
