Ingredients
1 tin condensed milk
4 tablespoons plain flour
4 tablespoons caster sugar
1 tablespoon unsalted butter, softened
1 pack desiccated coconut (100 g)
1 tablespoon baking powder
3 eggs
4 tablespoons plain flour
4 tablespoons caster sugar
1 tablespoon unsalted butter, softened
1 pack desiccated coconut (100 g)
1 tablespoon baking powder
3 eggs
Where to find ingredients
Most of these ingredients are readily available in local supermarkets and general grocery shops across Sierra Leone. Condensed milk, flour, sugar, butter, eggs, and baking powder can be found in the baking or tinned goods aisles of major supermarkets. Desiccated coconut is often located in the baking section or with dried fruits and nuts. If you struggle to find high-quality desiccated coconut in a standard shop, check larger urban markets or specialized import stores, as they often carry a wider variety of baking supplies.
Preparation method
- In your blender jug, add the condensed milk, desiccated coconut, eggs, butter, flour, and sugar
- Blitz all the ingredients together until you have a smooth, well-combined batter
- Gently fold in the baking powder using a spoon or spatula, or just pulse the blender a few times to incorporate it carefully
- Pour the mixture into a tin that has been greased with a bit of butter and lightly dusted with flour
- Bake in a preheated oven at 180°C for about 30 to 40 minutes, or until a skewer inserted into the middle comes out clean
- Take the cake out of the oven and let it sit until it’s warm to the touch
- While still warm, slice the cake into neat squares
- Roll each piece lightly in extra caster sugar before serving for that authentic finish
