Where to find ingredients
Look for the ingredients in the fresh produce section, baking aisle, and supermarket pantry shelves; if needed, use a plain vegetable oil substitute available locally.
Preparation method
- Peel and chop the carrots into smaller pieces
- In a blender, add the oil, the eggs, the chopped carrots and the pinch of salt
- Blend well until you get a smooth, even mixture
- Add the sugar gradually, continuing to blend until incorporated
- In a separate bowl, mix the sifted plain flour with the baking powder
- Pour the blended mixture from the blender over the dry ingredients in the bowl
- Gently mix with a whisk or spatula until everything is well combined and the batter is smooth, with no flour lumps
- Grease a cake tin with butter and sprinkle with sugar
- Pour the batter into the prepared tin
- Bake in a preheated oven at 180°C for about 35-45 minutes, or until a skewer inserted into the centre comes out clean
