Where to find ingredients
You can find all ingredients at local supermarkets or general grocery stores. Look for fresh yeast and heavy cream in the dairy aisle, and high-quality semi-sweet chocolate in the baking section. If fresh yeast is unavailable, active dry yeast may be used as a substitute (use 1/3 of the weight).
Preparation method
- In a mixing bowl, combine the eggs, fresh yeast, butter, sugar, salt, 1 cup of flour, and 1/2 cup of milk.
- Whisk to create a sponge and let it rest for 5 minutes.
- Add the remaining flour and milk, kneading thoroughly until a soft, smooth dough is formed.
- Let the dough rest for another 5 minutes.
- Shape the dough into balls and let them rise until doubled in size, approximately 30 minutes.
- Fry the donuts in oil at 170°C (338°F) until golden brown.
- Remove the donuts and drain on paper towels.
- To make the cream: in a saucepan, whisk together the whole milk, sugar, sieved egg yolks, cornstarch, flour, butter, vanilla, and cocoa liqueur.
- Cook over medium heat, stirring constantly until it thickens and boils. Continue cooking for 30 seconds after boiling.
- Remove from heat and allow the cream to cool completely.
- Prepare the sugar glaze: in a saucepan, combine water and sugar and heat without stirring.
- Simmer for about 12 minutes, until it reaches the thread stage.
- Remove from heat and pour the syrup onto a cold, slightly dampened marble surface.
- Sprinkle the lemon juice over the syrup and beat with a wooden spoon from the center outward until a white, uniform paste forms.
- Test the consistency of the paste; it should be firm enough to hold its shape.
- Store the glaze in a plastic bag until ready to use; melt in a double boiler if necessary.
- Prepare the chocolate glaze: in a saucepan, heat the heavy cream until just boiling.
- Remove from heat and stir in the chopped semi-sweet chocolate and unsalted butter.
- Stir well until the chocolate has fully melted and the mixture is glossy and smooth.
- Slice the donuts in half horizontally or use a piping nozzle to create a hole for filling.
- Fill with the vanilla cream and, if desired, add a layer of strawberry jam.
- Dip the top of the donuts into the melted chocolate glaze and set aside to firm up.
Observations

It holds a special place in the country's bakery culture, prized for the perfect harmony between the airy dough and the sweet, decadent centers.
