Juice of 1 large orange
1 tablespoon unsalted butter
150g sliced bacon
1 cup coarse salt

Preparation method

  1. Using a sharp knife, carefully create a slit in the center of the picanha to form a pocket, being careful not to cut through the sides
  2. Pour the orange juice all over the meat, making sure some liquid gets into the pocket
  3. Let the meat marinate for 4 hours to fully absorb the flavor
  4. Stuff the pocket with the bacon slices and close the opening
  5. Spread the butter evenly over the entire surface of the meat
  6. Coat the meat with the coarse salt, pressing gently so it adheres well to the buttered surface
  7. Place the picanha on the grill, about 40 cm from strong embers, fat-side down, for 20 minutes
  8. Flip the meat, with the fat-side facing up
  9. When you notice the meat puffing up slightly, remove it from the heat
  10. Transfer to a platter, cover with a clean kitchen towel, and let it rest for 10 minutes
  11. Return the meat to the grill, fat-side up, for another 5 minutes to reach the ideal doneness
  12. Slice thinly into strips, like roast beef, and serve immediately
