2 beef stock cubes
3 tablespoons vegetable oil
1 cured sausage (paio), sliced
1 onion, grated
1 garlic clove, crushed
1/2 tablespoon fresh coriander, chopped
2.5 cups white rice
150 g coalho cheese, thinly sliced
500 g green beans (feijão verde)
2 beef stock cubes
3 tablespoons vegetable oil
1 cured sausage (paio), sliced
1 onion, grated
1 garlic clove, crushed
1/2 tablespoon fresh coriander, chopped
2.5 cups white rice
150 g coalho cheese, thinly sliced
Where to find ingredients
Green beans (feijão verde) can be sourced from farmers' markets or the produce section of well-stocked supermarkets; if unavailable, fresh kidney beans or pinto beans are acceptable substitutes. Cured sausage (paio) is typically found in the deli section or at specialty Latin-American butchers; a dry-cured pork sausage like linguiça or even chorizo can work as a substitute. Coalho cheese (queijo coalho) is a unique grilling cheese that doesn't melt completely; look for it in the specialty cheese section of international markets or Latin-themed shops. For fresh coriander, check the fresh produce herb section.
Preparation method
- Soak the green beans in water overnight
- The next day, drain the beans and cook them in a pot with 2.5 litres of cold water and the beef stock cubes
- Cover the pot and cook over a low heat for about 1 hour, or until the beans are tender
- While the beans are cooking, heat the oil in another pot
- Brown the paio sausage, grated onion, and crushed garlic in the oil
- Add the washed and drained rice and the chopped coriander to the mixture, and sauté well for a few minutes
- Combine the cooked beans with their cooking liquid into the rice mixture
- Stir all the ingredients together, cover the pot, and cook over a low heat until the rice is cooked and the mixture is moist and creamy
- Distribute the slices of coalho cheese over the rice
- Cover the pot again and let the steam melt the cheese for a few minutes
- Serve the Baião de Dois hot, accompanied by fried or roasted dried beef, if desired
