Where to find ingredients
You can find long-grain white rice, olive oil, fresh onions, and bay leaves at local markets or any well-stocked grocery store. For the best aroma, use fresh Tahiti limes (often labeled as Persian limes) available in the produce section.
Preparation method
- Peel the onion and mince it into very small pieces
- Pour the water into a kettle and heat over low flame until boiling
- Warm a medium saucepan over low heat
- Add the olive oil and the minced onion
- Season with a pinch of salt
- Sauté for about 2 minutes until the onion is soft
- Place the bay leaf and the rice into the saucepan
- Stir for approximately 1 minute so the grains are well coated in oil, which ensures a fluffy result
- Measure 2 cups of boiling water and pour it over the rice
- Season with the remaining salt and mix
- Increase the heat to medium
- Avoid stirring from this point on
- Wait for the water level to reach the level of the grains
- Reduce the heat and partially cover the pan
- Cook until all the water is absorbed
- Check the bottom of the pan with a fork to confirm the water has fully evaporated
- Turn off the heat
- Add the lemon zest
- Cover the pan completely
- Let the rice steam and rest for 5 minutes
- Use a fork to fluff the grains and incorporate the zest
- Transfer to a bowl and serve immediately
