1 cup long-grain white rice
1/2 tsp salt
2 cups boiling water
1/2 onion, finely chopped
1 bay leaf
1 cup long-grain white rice
1/2 tsp salt
2 cups boiling water
Where to find ingredients
You can find all staples like long-grain rice, onions, and oil at local supermarkets or open-air markets across Papua New Guinea. Ensure the rice is thoroughly rinsed with fresh water before cooking for the best texture.
Preparation method
- Finely dice the onion into small cubes
- Bring the water to a boil in a kettle or pot
- Warm a medium saucepan over low heat
- Add the olive oil and the chopped onion
- Add a pinch of the salt
- Sauté the onion for 2 minutes until softened
- Add the bay leaf to the pan
- Add the rice and stir for 1 minute to coat the grains in the oil
- Pour the boiling water over the rice
- Season with the remaining salt and stir gently
- Increase the heat to medium
- Avoid stirring the rice from this point on
- Wait until the water level drops to the level of the grains
- Reduce heat to low and partially cover the pot
- Cook until all the water has been absorbed
- Test the doneness by inserting a fork and pushing the grains aside at the bottom of the pot
- Keep on the heat for a few more moments if any moisture remains
- Turn off the heat and keep the lid on for 5 minutes to let the steam finish the cooking process
- Fluff the grains gently with a fork before serving
