Indian-Style Minced Beef Stew (Picadinho com temperos indianos)

Ingredients

1 medium onion, chopped
500 g beef (sirloin or topside), cut into small cubes
3 tablespoons margarine
3 tablespoons all-purpose flour
3 whole cloves
1 teaspoon ground cinnamon
1 tablespoon curry powder
2 beef stock cubes
4 cups boiling water
2 tomatoes, peeled, seeded and chopped
1 apple, peeled and cut into small cubes
1 Cavendish banana, chopped
1/2 cup desiccated coconut
1/2 cup white sultanas
1/2 cup natural yoghurt
1/2 cup chopped fresh herbs (parsley and spring onions)

Where to find ingredients

Most ingredients are readily available in local supermarkets. For the beef, a butcher or meat section in supermarkets is recommended. If preferred, butter can be used as a substitute for margarine, and common cooking apples or gala apples work well for the recipe.

Preparation method

  1. In a large pot, melt the margarine and sauté the chopped onion until translucent.
  2. Add the cubed beef and brown on all sides over medium-high heat.
  3. Sprinkle the flour over the beef and stir well, cooking for 1 minute.
  4. Add the cloves, cinnamon, and curry powder, stirring to coat the meat and spices evenly.
  5. Dissolve the beef stock cubes in the boiling water and pour into the pot.
  6. Cover the pot and simmer over low heat for about 40 minutes, or until the beef is tender.
  7. Add the chopped tomatoes, apple cubes, chopped banana, desiccated coconut, and sultanas.
  8. Stir gently and cook for another 10 minutes, stirring occasionally.
  9. Fold in the natural yoghurt, mixing well to achieve a creamy consistency.
  10. Season with salt and black pepper to taste, if necessary.
  11. Remove from the heat and finish by sprinkling with the chopped fresh herbs.
  12. Serve the beef stew hot, accompanied by white rice.
