Brazilian steak with onions (Bife acebolado)

Ingredients
2 steaks, sirloin, rump or topside
1 onion
2 tablespoons water
2 teaspoons white wine vinegar
1 teaspoon butter

Where to find ingredients
Steak cuts such as sirloin, rump or topside can be found at butchers and supermarket meat counters. Onion, vinegar, butter, olive oil, salt and black pepper are available in supermarkets and general food shops.
Preparation method
- Leave the steaks out of the fridge for 10 minutes so they lose their chill before you start cooking
- Prepare a mixture in a small bowl by combining the water with the vinegar
- Peel the onion and slice it into half-moons about 0.5 cm thick
- Heat a wide frying pan over medium heat
- Season the steaks with salt and black pepper
- Place 1 teaspoon olive oil in the very hot frying pan
- Arrange the steaks side by side
- Grill for 2 minutes until browned and released from the surface
- Turn the steaks with tongs
- Grill the other side for another 2 minutes
- Remove the meat from the frying pan and reserve on a plate
- Keep the frying pan over medium heat and add another 1 teaspoon olive oil
- Sauté the onions with a pinch of salt for 2 minutes until they start to brown
- Pour the water and vinegar mixture into the frying pan
- Cook for 3 minutes, stirring occasionally to loosen the bottom of the pan and soften the onion
- Turn off the heat
- Add the butter and shake the frying pan until it melts and emulsifies the sauce
- Serve the steaks covered with the onion and the pan sauce
