Where to find ingredients
You can find fresh, ripe tomatoes and basil at your local farmers' market or produce section of any grocery store. Coarse salt and quality olive oil are available in the baking or condiment aisles of most supermarkets.
Preparation method
- Wash and dry the tomatoes thoroughly
- Remove the top stem area of each tomato
- Place each tomato cut-side down on a cutting board
- Cut into a cross and then an X shape to create 8 even wedges
- Place the tomato wedges into a sieve or colander set over a bowl
- Sprinkle the coarse salt over them and toss well so all pieces are coated
- Cover the container with plastic wrap or a plate
- Refrigerate for 24 hours so the tomatoes can drain and firm up
- If you need to serve sooner, allow them to drain for at least 30 minutes
- Remove from the refrigerator just before serving
- Discard the liquid that accumulated in the bowl
- Gently shake the wedges to remove any excess coarse salt
- Arrange the tomatoes on a serving plate
- Finish by seasoning with olive oil and black pepper
- Add the fresh basil leaves to taste and serve
