Where to find ingredients
In Namibia, you can find most of these ingredients in major grocery stores like Woermann & Brock or Checkers. For the prawns, check the seafood counter at your local supermarket or specialized frozen seafood suppliers. Requeijão is a specific Brazilian creamy cheese; if you can't find it in international/imported food aisles, use thick crème fraîche or a blend of cream cheese and a little milk as the best local substitute. For 'queijo prato', any mild, semi-soft yellow cheese like Havarti or Gouda is a great stand-in.
Preparation method
- Heat a pan over medium heat and sauté the garlic in olive oil until golden
- Add the prawns and cook until they turn pink and are just tender
- Toss in the fresh and dried herbs, mixing well, and let the flavours meld for a few minutes
- Stir in the salt, mustard, and tomato paste, mixing thoroughly to incorporate all the flavours
- Arrange the cheese slices over the prawns, taking care to keep them away from direct contact with the pan bottom to prevent burning
- If the sauce thickens too much, add a splash of boiling water at a time until you reach your preferred consistency
- Once the cheese has melted, stir in the requeijão cremoso and heavy cream until well combined
- As soon as the sauce starts to bubble gently, take it off the heat
- Transfer to a serving dish and serve hot
