Ingredients

1 can (14 oz) sweetened condensed milk
2 large eggs
1 1/4 cups (240 ml) milk
3/4 cup (150 g) sugar
1/4 cup (60 ml) boiling water

Method

  1. Break the eggs individually into a small bowl and transfer to a larger container
  2. Use a whisk to gently mix the egg whites and yolks
  3. Add the sweetened condensed milk and incorporate well
  4. Pour in the milk gradually and stir gently to avoid creating air bubbles
  5. Let the mixture rest while you prepare the caramel
  6. Heat 3 cups of water in a kettle to use for the caramel and for the bain-marie
  7. Place the sugar in a pan over low heat, stirring with a spatula until golden
  8. Carefully add 1/4 cup of boiling water to the caramel, being mindful of splattering
  9. Stir until the mixture is smooth
  10. Pour the caramel into a 7-inch (18 cm) ring mold
  11. Swirl the mold with the help of a cloth to coat the sides as well
  12. Strain the flan mixture directly into the caramelized mold
  13. Cover the mold tightly with aluminum foil, folding the edges to secure
  14. Line the bottom of the pressure cooker with a folded kitchen towel
  15. Add water for the bain-marie and place the mold inside the pressure cooker
  16. Close the pressure cooker and cook on low pressure for 10 minutes
  17. Carefully release the pressure from the cooker after the indicated time
  18. Check if the flan surface is firm and carefully remove from the cooker
  19. Remove the aluminum foil and let the dessert cool at room temperature
  20. Refrigerate for at least 3 hours before unmolding
  21. Lightly warm the bottom of the mold over the stove to loosen the caramel when unmolding
  22. Loosen the sides with a knife, cover with a deep plate, and invert in one swift motion

Cooking in an electric pressure cooker speeds up the cooking time, allowing the dessert to be ready quickly. The secret to a smooth flan is to mix the ingredients without incorporating air and let the mixture rest before cooking.
