Where to find ingredients
Most ingredients like eggs, flour, milk, and ham are staples found in any local grocery store. For specific items: Look for coconut milk in the international or baking aisle of your supermarket. Dried oregano is available in the spice section. For the best result, opt for a good quality block of mozzarella and grate it yourself rather than using pre-shredded cheese. You can find green, pitted olives in the pantry aisle near pickles and jars. If you have a local Latin American or specialty grocery shop nearby, they are your best bet for authentic Brazilian ingredients, though these items are widely available in mainstream markets.
Preparation method
- In a blender, whizz together the coconut milk, eggs, milk, oil, flour, cornflour, baking powder, and a pinch of salt until you have a smooth batter
- Set the batter aside to rest
- In a separate bowl, stir together the chopped onion, chopped olives, tomato sauce, one tablespoon of oregano, and salt to taste
- Set the filling mixture aside
- Grease a rectangular baking tin (roughly 28 cm x 19 cm x 5 cm) with margarine and lightly dust with flour, tapping out the excess
- Pour half of the batter into the prepared tin
- Evenly layer the chopped ham, mozzarella, and the tomato filling over the base
- Pour the remaining batter over the top to cover the filling
- Sprinkle with grated parmesan and an extra dusting of oregano
- Bake in a preheated oven at a medium setting (180°C) for about 45 minutes, or until the cake is golden brown and set in the centre
