Classic Savory Steamed Cornmeal Cake (Cuscuz)

Ingredients

200 g cornmeal (farinha de milho)
2 tbsp cassava flour (farinha de mandioca)
1 can sardines in oil
1 can peas
3 hard-boiled eggs
2 tbsp chopped fresh herbs (cheiro-verde)
10 black olives, chopped
5 tomatoes, diced
4 hearts of palm, chopped
1 can tomato sauce
250 g shrimp
Water and salt to taste for the sauce

Where to find ingredients

Find cornmeal and cassava flour at local grocery stores in the baking or grains aisle. Canned sardines and hearts of palm are common in the pantry or specialty international sections of local markets.

Preparation method

  1. In a saucepan, combine the diced tomatoes, black olives, chopped hearts of palm, peas, tomato sauce, and the shrimp.
  2. Cook the mixture over medium heat, adding water and salt to taste, until it develops into a thick and flavorful sauce.
  3. In a separate mixing bowl, combine the cornmeal and the cassava flour.
  4. Gradually pour the hot sauce over the flour mixture, stirring constantly until you achieve a moist and uniform consistency.
  5. Preheat your steamer (cuscuzeiro).
  6. Pack the mixture into the steamer, shaping the cuscuz into the container.
  7. Decorate the top of the mixture with the hard-boiled eggs and the sardines.
  8. Steam the cuscuz over low heat for approximately 20 to 30 minutes, or until it is firm and fully cooked through.
  9. Serve warm, garnished with the chopped fresh herbs.

Observations

Cuscuz brasileiro is a highly versatile and beloved staple, particularly cherished in the Northeast region. The cornmeal base, when hydrated with a rich, savory sauce, creates a delightful and satisfying meal. This recipe layers ingredients like shrimp, sardines, and hard-boiled eggs, resulting in a complex depth of flavor that is both traditional and filling.
