Salt and freshly ground black pepper to taste

Where to find ingredients
You can find fresh, ripe tomatoes, basil, and high-quality olive oil at local farmers' markets, greengrocers, or the produce section of most supermarkets.
Preparation method
- Wash and dry the tomatoes thoroughly
- Remove the top of each tomato
- Place the tomato with the cut side down on a chopping board
- Cut crosswise and then diagonally to get 8 equal wedges
- Place the tomato pieces in a sieve or colander set over a bowl
- Sprinkle the coarse salt over them and toss well so all pieces are coated
- Cover the container with cling film or a plate
- Refrigerate for 24 hours so the tomatoes drain well and keep their firm texture
- If you need to serve sooner, let them drain for at least 30 minutes
- Remove from the fridge just before serving
- Discard the liquid collected in the bowl
- Shake the wedges gently to remove any excess coarse salt
- Arrange the tomatoes on a serving plate
- Finish by seasoning with olive oil and black pepper
- Add the fresh basil leaves to taste and serve
Observations
This preparation highlights the tomato as the star ingredient. The salting and draining process improves the texture and intensifies the flavor, resulting in a light and aromatic side dish.
