Where to find ingredients
You can find most of these ingredients at your local supermarket or farmers' market. For the shrimp, visit your local fishmonger for the freshest catch. If you can't find 'requeijão' (a unique Brazilian creamy cheese), a good quality full-fat cream cheese is a fine substitute, though the flavour profile is distinct. Annatto powder can often be found in the spice aisle or at shops selling Caribbean and Latin American products. Beef-style seasoning is readily available in the stock cube or powdered seasoning aisle. For fresh herbs, visit the local market stalls to get the best bunches of spring onions and cilantro.
Preparation method
- Clean the shrimp thoroughly and marinate in lime juice and salt for about 20 minutes
- Rinse the shrimp well and drain all excess water
- In a large heavy-bottomed pot, sauté the crushed garlic in olive oil until fragrant
- Add the chopped onions, annatto powder, and tomatoes to the pot
- Cook everything until the onions are soft and translucent
- Stir in the tomato sauce, beef-style seasoning, and fresh chopped basil
- Add the butter and the shrimp into the pot
- Let it simmer over low heat for about 30 minutes, giving it an occasional stir
- Fold in the creamy requeijão and continue cooking for 10 minutes, stirring constantly until the sauce thickens nicely
- If it needs extra thickness, whisk the cornstarch into a little of the hot broth from the pot, pour it back in, and cook for 3 more minutes
- Toss in the freshly chopped coriander and spring onions
- Remove from the heat and stir in the heavy cream
- Mix gently until you have a smooth, homogeneous, and silky sauce
