Traditional Creamy Vatapá

Ingredients

70g dried smoked shrimp
250g white fish steaks
Salt and black pepper to taste
1/2 onion, sliced
1 tomato, peeled and diced
1/2 cup green bell pepper, chopped
2 tsp coriander powder
1 tsp crushed red pepper flakes
20 mL lime juice
3 tbsp dende oil
1/2 cup roasted cashew nuts
1/2 cup roasted peanuts, skins removed
1 tsp freshly grated ginger
2 slices white bread, crusts removed and soaked in liquid
1/2 cup coconut milk
1/2 cup water

Where to find ingredients

Dried shrimp, dende oil, and exotic spices are typically found in the international aisle or specialized Caribbean grocers. Fresh produce, fish, and staples like bread, coconut milk, and nuts can be purchased at local supermarkets, municipal markets, or farm-to-table stalls. If dende oil is unavailable, cold-pressed red palm oil is the ideal authentic substitute.

Preparation method

  1. Soak the dried shrimp in water to remove excess salt.
  2. Roast the peanuts and ensure all skins are removed.
  3. Season the white fish steaks with salt and black pepper, then set aside.
  4. In a heavy-bottomed pot, heat half of the dende oil and sauté the onion, tomato, coriander powder, and bell pepper.
  5. Arrange the seasoned fish steaks over the sautéed vegetable base.
  6. Cook for approximately 5 minutes.
  7. Sprinkle with the crushed red pepper flakes.
  8. Drizzle the lime juice and the remaining dende oil over the fish.
  9. Cover the pot, place over medium heat, and cook until the fish is tender.
  10. Carefully remove the fish from the broth, flake into small pieces, and keep the cooking liquid in the pot.
  11. In a blender or food processor, combine the drained dried shrimp, cashews, peanuts, grated ginger, soaked bread, coconut milk, and water.
  12. Pulse until you achieve a smooth yet slightly textured paste; be careful not to over-process.
  13. Gently fold the blended paste into the reserved cooking liquid in the pot.
  14. Cook over low heat, stirring constantly, until the mixture thickens to the characteristic creamy consistency of vatapá.
  15. Fold the flaked fish pieces back into the mixture.
  16. Taste and adjust salt and black pepper as needed.
  17. Serve warm.

Observations

Vatapá is a cornerstone of Brazilian culinary tradition, particularly famous in Bahia for its signature creamy texture and deeply complex flavor profile. This dish is built upon a base of soaked bread, silky coconut milk, vibrant dende oil (palm oil), and aromatic seasonings, then elevated with savory dried shrimp and tender white fish. Its enduring popularity stems from a harmonious blend of ingredients that creates a comforting, indulgent meal, perfectly suited for festive gatherings or whenever you wish to savor a true icon of national cuisine.
