Calabresa Sausage Croquette (Coxinha de calabresa)

Ingredients

1 cup water
2 cups milk
2 bacon or rib bouillon cubes
200 g calabresa sausage, skinned and minced
1/2 cup cooked and mashed potato
1 tablespoon butter
2 1/2 cups all-purpose flour
Margarine for greasing
20 pitted green olives
Breadcrumbs for coating
1 egg, beaten
Oil for deep-frying

Where to find ingredients

You can find all-purpose flour, milk, butter, eggs, and breadcrumbs at any local supermarket. For the calabresa sausage, check the deli or world food section of large grocery retailers, or inquire at a local butcher shop; a smoky cured sausage like chorizo or similar can serve as a substitute.

Preparation method

  1. Place the water, milk, bouillon cubes, minced calabresa, potato, and butter in a large pot.
  2. Bring the mixture to a boil over medium-high heat.
  3. Add the flour all at once.
  4. Stir vigorously until the dough pulls away completely from the bottom of the pot.
  5. Turn the dough out onto a smooth, lightly greased surface.
  6. Knead the dough carefully and allow it to cool.
  7. Take small portions of the dough and flatten them with your hands.
  8. Place an olive in the center of each portion.
  9. Shape the dough into the characteristic teardrop shape of a coxinha.
  10. Dip each unit into the beaten egg.
  11. Roll the coxinhas in breadcrumbs to coat thoroughly.
  12. Deep-fry in hot oil until they reach a golden-brown color.
  13. Drain on paper towels to remove excess oil before serving.

Observations

This recipe uses calabresa sausage to create an irresistible savory treat. The blend of mashed potato and milk in the dough ensures a soft and light texture, making these the perfect choice for gatherings or quick snacks.
