Ingredients
3 cups long-grain white rice
6 cups water
Salt to taste
Dash of sunflower or vegetable oil
1 tbsp butter
1 box sultanas
5 tbsp garden peas

Onion, finely chopped to taste
Fresh parsley, chopped to taste
Spring onions, sliced to taste
Grated Parmesan cheese to taste

Preparation method
- Pour the water into a saucepan and add the salt and a drizzle of oil
- Place over a medium-high heat and bring the water to a boil
- Add the washed rice to the pan and stir gently
- Turn the heat down to low
- Cook until all the water has been absorbed by the rice
- Remove the pan from the heat and leave it to one side
- Melt the butter in a separate frying pan or casserole dish
- Sauté the sultanas and peas until warmed through
- Transfer this mixture into a large mixing bowl
- Add the spring onions, diced carrot, bell pepper, onion, parsley, and Parmesan to the bowl
- Fold in the cooked rice to the other ingredients in the bowl
- Toss everything together carefully until well combined and even
