Ingredients
1 tbsp olive oil
1/2 finely chopped onion
1 bay leaf
1 cup rice
1/2 tsp salt
2 cups boiling water
1/2 finely chopped onion
1 bay leaf
1 cup rice
1/2 tsp salt
2 cups boiling water
Where to find ingredients
Find the ingredients in the rice aisle, fresh produce section, and herbs shelf at any supermarket or local grocer in Ireland. If needed, use a bay leaf substitute, but keep the original bay leaf as the ideal ingredient.
Preparation method
- Finely dice the onion
- Heat the water until it comes to the boil
- Warm a medium saucepan over a low heat
- Add the olive oil and onion
- Add a pinch of salt
- Cook the onion for 2 minutes until softened
- Stir the bay leaf into the sautéed onion
- Add the rice and stir for 1 minute so the grains are coated in the oil
- Pour the boiling water over the rice
- Season with the remaining salt and mix gently
- Increase the heat to medium
- Do not stir the rice from this point on
- Wait until the water reaches the level of the grains
- Lower the heat and cover the pan partially
- Cook until all the water has been absorbed
- Check the texture by inserting a fork and moving the grains apart at the bottom of the pan
- Leave it on the heat for a few more moments if there is still any moisture
- Turn off the heat and keep the pan covered for 5 minutes so the steam finishes the cooking
- Gently fluff the grains with a fork before serving
Observations
This method gives you a classic, light and tender side dish, with grains that cook evenly and make the perfect base for everyday meals.
