Easy Traditional Baião de Dois Recipe (Baião de dois receita e)

Ingredients

2.5 litres cold water
500g green beans (feijão verde)
2 beef stock cubes
3 tablespoons vegetable oil
1 paio sausage, sliced
1 onion, grated
1 garlic clove, crushed
1/2 tablespoon fresh coriander, chopped
2 1/2 cups white rice
150g queijo coalho, thinly sliced

Where to find ingredients

You can find green beans and coriander at local greengrocers or the produce section of supermarkets like Dunnes Stores or SuperValu. For Brazilian-specific ingredients like paio sausage and queijo coalho, look for independent ethnic food stores or Polish/Latin specialty shops in major Irish cities.

Preparation method

  1. Soak the green beans in water overnight.
  2. The next day, drain the beans and cook them in a pot with the 2.5 litres of cold water and the beef stock cubes.
  3. Cover the pot and simmer over low heat for about 1 hour, or until the beans are tender.
  4. While the beans are cooking, heat the oil in a separate large pot.
  5. Fry the sliced paio sausage, grated onion, and crushed garlic in the oil until golden brown.
  6. Add the rinsed and drained rice along with the chopped coriander to the pot, sautéing for a few minutes.
  7. Pour the cooked beans and their cooking liquid into the rice mixture.
  8. Stir everything together, cover the pot, and cook over low heat until the rice is tender and the mixture is moist and creamy.
  9. Arrange the slices of queijo coalho evenly over the top of the rice.
  10. Cover the pot again and let it sit for a few minutes so the residual steam melts the cheese.
  11. Serve your Baião de Dois hot, ideally accompanied by pan-fried or roasted carne-de-sol if desired.
