Ingredients

Preparation method
- Peel and chop the onion into small pieces
- Wash and roughly chop the salsinha, then set aside
- Fill a kettle with just over 2 cups of water and bring to a low simmer
- Heat a medium-sized pan over low heat
- Add the olive oil and chopped onion to the pan
- Season with a pinch of salt and sauté for about 2 minutes until the onion softens
- Add the bay leaf and rice to the pan
- Stir constantly for 1 minute to coat the rice grains with the oil and to maintain separation
- This step helps keep the rice fluffy after cooking
- Measure exactly 2 cups of boiling water and add to the rice
- Season with the remaining salt and stir well
- Increase the heat to medium
- Avoid stirring from this point onward
- When the water level reaches the rice, lower the heat and partially cover the pan
- Cook until all the water has been absorbed
- Check the bottom of the pan for dryness using a fork to separate the grains
- Turn off the heat
- Keep the pan covered for 5 minutes to finish steaming
- Use a fork to fluff the rice grains and gently fold in the chopped salsinha
- Serve immediately
