Ingredients
1 1/2 cups rice
2 cups water
1 star anise
1 teaspoon salt
2 cups water
1 star anise
1 teaspoon salt
Where to find ingredients
Rice is a pantry staple available at all local supermarkets like Dunnes Stores, Tesco, or SuperValu. Star anise is widely available in the herbs and spices aisle at any major grocery store. For the best quality star anise or if you are looking for specific rice varieties, check the Asian food section in larger supermarkets or visit an international grocery shop.
Preparation method
- Place the rice, water, salt and star anise into your pressure cooker
- Give it a gentle stir with a spoon
- Secure the lid and set the hob to a high heat
- As soon as the cooker reaches pressure, turn the heat down low
- Leave it to cook for 5 minutes
- Turn off the heat and let the steam release naturally until you can no longer hear any noise
- Carefully open the lid and fish out the star anise
- Transfer the rice to a serving bowl
- Serve the rice whilst still piping hot
Observations
This method produces rice with a lovely soft texture that is just slightly sticky, making it the perfect base for Asian-inspired dishes or any meal that needs a special aromatic lift.
