1/2 orange, with peel
400g pork ribs, cubed and desalted

Where to find ingredients
You can find black beans, pork cuts, and sausages at local butchers or the meat and dried goods sections of neighborhood markets and grocery stores. If 'carne-seca' or 'paio' are unavailable, high-quality air-dried beef and smoked chorizo can serve as suitable substitutes.
Preparation method
- Ensure all salted meats are properly desalted before beginning.
- In a large heavy-bottomed pot, sear the pork loin and ribs until browned, about 6 minutes.
- Remove the seared meat from the pot and set aside.
- In the same pot, fry the bacon until golden and the fat has rendered.
- Add the onion to the bacon, sautéing until translucent while scraping the bottom of the pot to incorporate the flavorful bits.
- Stir in the garlic and bay leaves, and continue to sauté for another 5 minutes.
- Add the soaked and drained black beans to the pot and stir well.
- In a separate pot, boil the tougher cuts of meat (trotter, knuckle, tail, ear, and carne-seca) to remove impurities.
- Drain the boiled meats and transfer them to the main pot with the beans.
- Cover the ingredients with water, adjust seasoning, and bring to a boil over high heat.
- Reduce the heat, partially cover, and simmer for 3 hours, regularly skimming any foam that rises to the surface.
- After 1 hour and 15 minutes, carefully remove the carne-seca, cut it into cubes, and set aside.
- Once the main cooking time is nearing an end, add the reserved seared pork loin and ribs, the parsley, and the half orange.
- After an additional 30 minutes, remove the orange from the pot and discard.
- When the pork loin is tender, remove it from the pot, slice into cubes, and set aside.
- Cook the sausages whole for 15 minutes, then slice them into rounds and add back to the pot.
- Return the cubed carne-seca and pork loin to the mixture, simmering everything together until the beans are soft and the broth has thickened.
- Add boiling water as needed throughout the process to maintain the liquid level.
