Preparation method
- Soak the black beans in water overnight.
- The following day, soak the salted meats in water, changing the water several times.
- Boil the salted meats in clean water and discard the liquid.
- Repeat the boiling and water-discarding process until the meats have reached your desired salt level.
- Boil the meats again in fresh water. If the water appears greasy, chill it in the freezer or refrigerator; the solidified fat can then be skimmed off the surface with a spoon.
- Use this defatted cooking liquid to simmer the beans.
