Grape Mousse (Mousse de uva)

Ingredients

250 ml grape juice
1 packet grape-flavored gelatin
6 egg whites, whipped
10 tablespoons sugar
300 ml table cream (creme de leite)
250 ml grape juice (for the sauce)
5 tablespoons sugar (for the sauce)
2 tablespoons cornstarch (for the sauce)

Where to find ingredients

You can find grape juice, gelatin, and canned table cream (creme de leite) in the baking or beverage aisles of local Gambian supermarkets and grocery shops. If you cannot find ready-made table cream, a full-fat thick pouring cream is a suitable substitute.

Preparation method

  1. Bring the first glass of grape juice to a boil in a small saucepan.
  2. Remove from heat and stir in the grape-flavored gelatin.
  3. Mix thoroughly until completely dissolved and set aside to cool.
  4. Beat the egg whites in a stand mixer until stiff peaks form.
  5. Gradually add the 10 tablespoons of sugar while continuing to beat until a firm meringue consistency is reached.
  6. Gently fold the cooled grape juice and gelatin mixture into the whipped egg whites.
  7. Add the table cream and stir softly with a spoon to incorporate.
  8. Pour the mixture into a round mold previously greased with unsalted margarine.
  9. Place in the refrigerator for 4 hours to set.
  10. Prepare the sauce only after unmolding the mousse.
  11. Heat the remaining grape juice, the sugar for the sauce, and the cornstarch in a saucepan over low heat.
  12. Stir constantly until the sauce thickens slightly.
  13. Let the sauce cool down slightly before drizzling it over the unmolded mousse.
  14. Finish by garnishing with mint leaves and fresh grapes.
  15. Return to the refrigerator for another 30 to 40 minutes before serving.

Observations

This recipe yields a refreshing and delicate dessert, perfect for rounding off family meals. The secret to success lies in achieving the right consistency with the whipped egg whites and being patient during the setting time in the fridge.
