100g sugar

250ml whipping cream

Where to find ingredients
You can find papayas in most supermarkets, usually in the tropical fruit section. Look for ripe ones that yield slightly to gentle pressure. Cashew nuts are widely available in the baking or snacking aisle of any grocery store. Whipping cream (or double cream) is usually found in the chilled dairy section.
Preparation method
- Cut the papayas in half and remove all seeds
- Scoop out the pulp from one papaya and process until smooth
- Finely dice the pulp from the second papaya and set aside
- Whip the cream with the sugar in a mixer until stiff peaks form
- Gently fold the papaya puree into the whipped cream, keeping it light
- Add the diced papaya pieces and fold them in carefully
- Pour the mixture into ice cube trays or a suitable container and freeze for at least 4 hours
- To unmould, briefly dip the bottom of the container in warm water
- Cut the ice cream into cubes, serve in bowls, and top with the chopped cashews
- If desired, add a few drops of lime juice over the bowls for a citrusy touch
