Where to find ingredients
In Ghana, raw groundnuts are easy to find at markets and grocery shops. Sugar, bicarbonate of soda and corn syrup are usually in supermarket baking sections; golden syrup can be used only as a substitute where corn syrup is unavailable.
Preparation method
- Start by mixing the groundnuts, sugar and corn syrup in a deep microwave-safe bowl
- Put the mixture in the microwave on high power for 10 minutes, remembering to pause the cooking a few times to stir well and make sure it cooks evenly
- As soon as you remove the bowl from the appliance, add the bicarbonate of soda and stir quickly so it is fully incorporated into the mixture
- Immediately spread the syrup onto a stone worktop or cold surface that has first been greased with a little margarine
- Leave the sweet to rest until completely cool, and only then break it into smaller pieces to serve
Observations
This is a handy answer when you want a traditional crunchy sweet without standing over the cooker for ages. The method is simple, direct and gives a delicious result.
