1 tin of sweetened condensed milk
1 tin of milk (use the empty condensed milk tin as a measuring cup)
2 tubs of natural yoghurt
6 medium-sized red guavas
1/2 cup of granulated sugar
1 and 1/2 cups of water (for the coulis)
1/2 cup of water (optional, for adjusting the coulis consistency)
6 tablespoons of cold water
1 tin of sweetened condensed milk
1 tin of milk (use the empty condensed milk tin as a measuring cup)
2 tubs of natural yoghurt
6 medium-sized red guavas
1/2 cup of granulated sugar
1 and 1/2 cups of water (for the coulis)
1/2 cup of water (optional, for adjusting the coulis consistency)
Where to find ingredients
You can find fresh guavas in the fruit section of local markets or street vendors. Standard tins of condensed milk, natural yoghurt, and gelatine are widely available at major supermarkets in Accra and across Ghana. If fresh guavas are unavailable, high-quality tinned guava halves in syrup can be used as a substitute, though you should reduce the added sugar accordingly.
Preparation method
- Hydrate the gelatine powder in the 6 tablespoons of cold water.
- Place the hydrated gelatine in a bain-marie until it has completely dissolved.
- In a blender, process the condensed milk, milk, natural yoghurt, and the dissolved gelatine until smooth.
- Pour the cream mixture into a ring mould that has been lightly dampened with water.
- Place in the refrigerator for approximately 4 hours, or until the flan is fully set.
- While the flan is chilling, prepare the sauce: peel the guavas and dice them.
- Place the diced guava in a saucepan with the sugar and 1 and 1/2 cups of water.
- Simmer over low heat for about 20 minutes, or until the guava is soft and beginning to break down.
- Remove from the heat and transfer the contents to a blender. Process until you have a smooth purée.
- Return the guava purée to the pan and cook over low heat for another 15 minutes, stirring occasionally, until the sauce thickens.
- If the sauce becomes too thick during cooking, stir in the optional 1/2 cup of water to adjust the consistency.
- Allow the guava sauce to cool completely before pouring it over the chilled flan to serve.
