1 1/2 litres cold water
1 strip lemon zest
1 tin condensed milk
Ground cinnamon for dusting
1 1/2 litres cold water
1 strip lemon zest
1 tin condensed milk
Ground cinnamon for dusting
Where to find ingredients
Rice and condensed milk are standard staples found in every local grocery shop or market across Ghana. You can easily pick up a tin of condensed milk from your neighbourhood store or the baking aisle of larger supermarkets. Fresh lemons are readily available in local markets or from roadside fruit vendors; simply peel a strip of the zest carefully. Ground cinnamon can be found in the spice section of any supermarket or in local markets where traditional spices are sold.
Preparation method
- Place the rice, water, and lemon zest in a large heavy-bottomed pot
- Bring the pot to a boil over high heat
- Turn the heat down to low and simmer until the rice is tender and most of the water has been absorbed
- Stir the condensed milk into the pot
- Mix everything thoroughly until well combined
- Remove from the heat as soon as the mixture reaches a smooth and consistent texture
- Finish by dusting with ground cinnamon to taste before serving
