Ingredients
2 teacups sugar
3 teacups raw peanuts
1 teaspoon bicarbonate of soda
1 teacup corn syrup
3 teacups raw peanuts
1 teaspoon bicarbonate of soda
1 teacup corn syrup
Where to find ingredients
In the UK, raw peanuts, sugar and bicarbonate of soda are available in supermarkets, wholefood shops and baking aisles. Corn syrup may be found in larger supermarkets or specialist baking shops; glucose syrup is a substitute only when corn syrup is unavailable.
Preparation method
- Start by mixing the peanuts, sugar and corn syrup in a deep microwave-safe bowl
- Microwave the mixture on high power for 10 minutes, pausing the cooking a few times to stir well and make sure it cooks evenly
- As soon as you take the bowl out of the microwave, add the bicarbonate of soda and stir quickly so it is fully incorporated into the mixture
- Immediately spread the syrup over a stone worktop or cold surface that has been lightly greased with margarine
- Leave the sweet to rest until completely cool, then break it into smaller pieces to serve
Observations
This is an ideal fix when you fancy a traditional crunchy sweet without spending ages at the hob. The method is simple, direct and gives a delicious result while preserving the identity of this Brazilian peanut treat.
