Ingredients
800 g of flank steak
Salt to taste
2 tablespoons of oil
1 sprig of rosemary
4 garlic cloves, minced
1 onion, chopped
Thyme to taste

1 can of beer
Salt to taste
2 tablespoons of oil
1 sprig of rosemary
4 garlic cloves, minced
1 onion, chopped
Thyme to taste
1 tablespoon of tomato paste
1 can of beer
Where to find ingredients
Find fresh flank steak and aromatics at local island markets or grocery stores. You can use any standard lager or pilsner-style beer; if you prefer a different cut, chuck roast is a great substitute, though cooking times may vary.
Preparation method
- Clean the flank steak and season the entire piece with salt.
- Heat the oil in a pot and add the sprig of rosemary to infuse the flavor.
- Place the meat in the pot and sear on all sides until well browned.
- Add the garlic, onion, and thyme to the pot.
- Sauté the vegetables for about 3 minutes.
- Pour the beer and the tomato paste over the meat.
- Keep over low heat for 30 minutes.
- Check the liquid level and add hot water little by little if necessary to maintain the cooking process.
- Remove the meat from the pot and keep it warm.
- Strain the remaining sauce in the pot.
- Bring the sauce to high heat to reduce until it reaches the desired consistency.
- Slice the meat, arrange it on a platter, and drizzle with the reduced sauce before serving.
Observations
This recipe turns simple beef cuts into a sophisticated meal. The key lies in properly searing the meat before starting the slow-cook process with the sauce, which adds a rich depth of flavor.
