Ingredients
1 kg sun-dried beef
2 large onions
1/3 cup bottled butter (clarified butter as a substitute)
Salt to taste
2 large onions
1/3 cup bottled butter (clarified butter as a substitute)
Salt to taste
Where to find ingredients
Sun-dried beef can be found at international markets or specialized butcher shops. Bottled butter (manteiga de garrafa) is available in ethnic food stores or can be replaced with high-quality ghee.
Preparation method
- Cut the sun-dried beef into pieces approximately 7 cm in size
- Rinse the beef pieces well under running water to remove excess surface salt
- Place the beef in a bowl and cover with cold water, keeping it in the refrigerator for at least 12 hours, changing the water at least 3 times during the process
- After desalting, drain the beef and rinse it thoroughly again under running water
- Place the beef in a pressure cooker and cover with water, ensuring you do not exceed the 2/3 capacity mark
- Cover the pot and place it over high heat
- Once the cooker reaches pressure and begins to whistle, lower the heat and cook for 30 minutes
- Turn off the heat and allow all pressure to release naturally before opening the lid
- Using a slotted spoon, remove the cooked beef from the pot and place it on a platter
- While the beef is still hot, shred it using two forks, discarding any pieces of fat or cartilage
- Alternatively, shred the beef using a stand mixer on low speed until you reach the desired texture
- Peel the onions and slice them into half-moons approximately 1 cm thick
- Heat a large frying pan over medium heat
- Add the bottled butter to the heated pan, then add the sliced onions and season with a pinch of salt
- Sauté the onions for about 5 minutes until they soften
- Add the shredded beef to the pan with the onions
- Stir and sauté for another 5 minutes, then taste and adjust the salt if necessary
- Serve immediately
