Pan-Seared Steak with Caramelized Onions (Bife Acebolado)

Ingredients

2 steaks (sirloin, top sirloin, or eye of round cut)
1 onion
2 tablespoons water
2 teaspoons white wine vinegar
1 teaspoon butter
Olive oil, to taste
Salt, to taste
Freshly ground black pepper, to taste

Where to find ingredients

You can find good quality steaks at most local butchers or the meat counter at your regular grocery store. Look for sirloin, top sirloin, or eye of round cuts. Onions are a staple found in any supermarket produce aisle. Olive oil, butter, salt, pepper, and white wine vinegar are also readily available at all major grocery stores. For the best flavor, use fresh black pepper and grind it right before using.

Preparation method

  1. Take the steaks out of the fridge for 10 minutes so they lose their chill before you start cooking
  2. In a small bowl, whisk together the water and vinegar
  3. Peel the onion and slice it into half-moons about 0.5 cm thick
  4. Heat a wide frying pan over medium heat
  5. Season the steaks with salt and black pepper
  6. Add 1 teaspoon of olive oil to the hot frying pan
  7. Arrange the steaks side by side
  8. Sear for 2 minutes until they are browned and release easily from the surface
  9. Flip the steaks using tongs
  10. Sear the other side for another 2 minutes
  11. Remove the meat from the pan and set aside on a plate
  12. Keep the pan over medium heat and add another 1 teaspoon of olive oil
  13. Sauté the onions with a pinch of salt for 2 minutes until they start to brown
  14. Pour the water and vinegar mixture into the pan
  15. Cook for 3 minutes, stirring occasionally to scrape up the browned bits from the bottom and soften the onion
  16. Turn off the heat
  17. Add the butter and swirl the pan until it melts and the sauce emulsifies
  18. Serve the steaks topped with the onions and the pan sauce
