Ingredients
2 cups chopped mango
1/3 cup granulated sugar
1/4 cup water
1 teaspoon grated lemon zest
4 egg whites
1 cup plain yogurt
1 envelope unflavoured gelatin powder
8 individual dessert cups or ramekins (1/2 cup capacity each)
1/3 cup granulated sugar
1/4 cup water
1 teaspoon grated lemon zest
4 egg whites
1 cup plain yogurt
1 envelope unflavoured gelatin powder
8 individual dessert cups or ramekins (1/2 cup capacity each)
Where to find ingredients
Most ingredients like mango, sugar, eggs, and lemons are readily available at major Canadian grocery chains such as Loblaws, Sobeys, or Metro. For the plain yogurt, you can use any standard full-fat or Balkan-style plain yogurt found in the dairy aisle. Unflavoured gelatin powder is typically found in the baking supplies aisle under brands like Knox. If you are looking for specific tropical mango varieties like Ataulfo (often sold as 'honey mangoes'), they are commonly stocked in the produce section of most Canadian supermarkets, especially during peak season.
Preparation method
- Puree the mango in a blender until completely smooth
- Set the mango purée aside
- In a stand mixer or with a hand mixer, beat the egg whites until they begin to foam
- Gradually add the sugar while continuing to whip until stiff, glossy peaks form
- Set the whipped egg whites aside
- In a small heatproof bowl, sprinkle the gelatin over the water
- Let the mixture sit for 1 minute to bloom
- Dissolve the gelatin completely by placing the bowl over a pot of simmering water (double boiler)
- Whisk the dissolved gelatin into the mango purée
- Fold the yogurt and lemon zest into the mango mixture until well combined
- Gently fold the whipped egg whites into the mango base using a spatula, being careful to maintain the aeration
- Divide the mousse evenly into your serving glasses or ramekins
- Refrigerate for at least 4 hours before serving to allow it to set
- Garnish with thin slices of fresh mango just before serving
Observations
This recipe is an excellent choice for a light finish to any meal. Whipped egg whites provide a delicate, airy structure, while the plain yogurt creates a beautiful balance between the sweetness of fresh mango and a bright, citrusy note from the lemon zest.
