Ingredients
3 aubergines
1/4 cup extra virgin olive oil
1/4 cup vegetable oil
1 tablespoon cumin seeds (or ground cumin)
1/2 teaspoon salt
Freshly cracked black pepper to taste
1/4 cup extra virgin olive oil
1/4 cup vegetable oil
1 tablespoon cumin seeds (or ground cumin)
1/2 teaspoon salt
Freshly cracked black pepper to taste
Where to find ingredients
You can find fresh aubergines in any local greengrocer or supermarket produce section. Olive oil and vegetable oil are staple pantry items available at any store. Cumin is commonly found in the spice aisle of major supermarkets; for a more vibrant flavour, look for whole cumin seeds in local spice shops or the international/Asian food section of your preferred grocery store.
Preparation method
- Preheat your oven to 220 ºC
- Wash the aubergines thoroughly and pat them dry
- Remove the stalks and slice the aubergines in half, separating the thinner end from the thicker bulb
- Slice those halves lengthwise
- Cut the thinner section into 1 cm half-moons
- Divide the thicker bulb into two strips and dice them into 1 cm chunks to keep the cooking time even
- In a small bowl, whisk together the olive oil, vegetable oil, cumin, salt, and black pepper
- Spread the aubergine pieces out across a spacious roasting tray
- Drizzle the dressing over the aubergine and toss well with your hands to ensure every piece is evenly coated
- Roast in the oven for about 40 minutes
- Turn the pieces halfway through using a spatula so they brown evenly on all sides
- Remove from the oven once they are tender and beautifully golden
- Serve straight away while hot
Observations
The key to this dish is slicing the vegetables uniformly, ensuring every piece becomes tender and perfectly golden at the same time. The combination of olive oil and aromatic cumin creates an irresistible fragrance while they roast in the oven.
