Pulp of 2 medium passion fruits (for decorating)
1/2 cup of water
1 tin (using the condensed milk tin to measure) of concentrated passion fruit juice
1 cup of sugar
1 tin of table cream

Preparation method
- In a blender, add the condensed milk, table cream and concentrated passion fruit juice
- Blend until you get a smooth and creamy mixture
- Transfer the mixture to a nice serving dish or into individual bowls
- Chill in the fridge for at least 2 hours, or until firmly set
- If you want to speed things up, you can pop it in the freezer for about 30 to 40 minutes
- While the mousse is chilling, make the syrup: in a saucepan, combine the sugar and water
- Set over medium heat and cook until the sugar dissolves and forms a thread-stage syrup
- Stir the passion fruit pulp gently into the syrup
- Cook for another 1 or 2 minutes, just to warm through and bring the flavors together
- Take off the heat
- Once the mousse has set, spoon the passion fruit syrup over the top before serving
